It turns out that Qui-Gon Jinn was at one point during Star Wars: Episode I - The Phantom Menace going to be closer to young Obi-Wan Kenobi's age and have a mohawk.
The new book Star Wars Storyboards: The Prequel Trilogy collects Lucasfilm artists' conceptual storyboards for Episodes I, II and III that showed early and often alternate or unused approaches to character designs, environments; and key moments.
As io9 points out, "there's a whole insane alien physiognomy to Jar Jar Binks that we never got to see. ... [It] turns out Jar Jar's bones were made of elastic. Which means when he went into an atmosphere with heavy gravity or high pressure, he would transform into Jar Jar Binks form of BLOB! The illustrators hoped this bodily reaction would exaggerate his reactions a bit more." Obviously, that's not how things played out in the final films.
Qui-Gon with a mohawk? An elastic Jar Jar? Things can't get any different, right? Wrong. The book also reveals Darth Maul was almost made to be a woman, with Chinese actress Maggie Cheung's (Police Story, Supercop) photo used for reference.
